Beth Conlon is a pediatric and family nutrition specialist based in New Jersey and the founder of From the Start Nutrition, LLC. Her interest in nutrition began in childhood, after being labeled “overweight”—an experience that led to years of disordered eating. Through her own recovery in her late teens to early twenties, Beth developed a deep empathy for others navigating eating disorders and disordered eating. As a mother of four, she has also guided her own child through extreme picky eating, giving her firsthand understanding of the stress mealtimes can bring—and how the right support can transform a family’s relationship with food.
Beth provides care for children, teens, and adults struggling with pediatric feeding disorders, eating disorders (including ARFID), disordered eating, digestive health concerns, food allergies, and chronic conditions such as diabetes and cardiovascular disease. With specialized training as a Certified Intuitive Eating Counselor and SOS Approach to Feeding specialist, she helps clients reduce anxiety, build confidence, and rediscover joy in eating through compassionate, evidence-based therapy.
Committed to advancing evidence-based practice, Beth holds a PhD in Clinical Investigation from Albert Einstein College of Medicine and an MS in Nutrition from Marywood University. She has served as an Adjunct Professor in graduate nutrition programs, authored textbook chapters, and published over 15 peer-reviewed research articles. Frequently featured in the media, she brings both academic expertise and practical insight to her work.
Beth offers in-network virtual care tailored to each client’s unique needs. Her mission is to empower people of all ages to find peace with food and thrive at every stage of life. Outside of her practice, she enjoys time with her family, weight training, and finding joy in everyday meals.
