Joy Umphrey, RDN, LDN, CLT
Joy’s interest in nutrition started early in life, growing up in a family that valued food, activity, and wellness. As a mom of six, she saw firsthand how nutrition impacts energy, mood, and long-term health, which deepened her desire to help others feel their best. She also has had multiple pregnancies with gestational diabetes, which puts her at high risk of developing Type 2 Diabetes. This personal connection allows her to empathize with her clients and fuels her passion for helping others prevent and manage diabetes through sustainable nutrition strategies. Her training in Medical Nutrition Therapy allows her to support clients with a variety of conditions such as diabetes, cardiovascular disease, chronic kidney disease, and IBS, as well as those seeking overall wellness and prevention.
Joy has a special passion for gut health, food sensitivities, and blood sugar management. She loves working in these areas because she’s seen how calming the gut and stabilizing blood sugar can transform a person’s daily life—bringing relief, renewed energy, and the freedom to enjoy food and travel again without constant worry.
Joy believes that every person deserves compassionate, individualized nutrition care. She practices with a supportive, evidence-based approach that blends science with flexibility, and she enjoys helping each client find their own path toward balance, confidence, and food freedom.
She earned her Bachelor of Science in Nutrition and Dietetics from Arizona State University and went on to complete her Master’s Degree in Dietetic Administration at Utah State University. She is a Monash University–trained FODMAP dietitian and a Certified Leap Therapist (CLT), using advanced tools like MRT food sensitivity testing to help reduce symptoms and improve outcomes for her clients.
Outside of her work, Joy enjoys strength training (Caroline Girvan's programs are her favorite) and caring for her flock of 20 backyard chickens. She loves spending time outdoors with her family, cooking simple yet flavorful meals, and believes food should always be both nourishing and joyful.
