Kelsey’s passion for nutrition began in high school when she landed her first job at McDonald’s. She quickly became curious about how everyday food choices affect long-term health. Around the same time, a weightlifting class taught her the importance of fueling her body properly—sparking a lifelong interest in how nutrition can support performance and wellness.
Today, Kelsey is a Registered Dietitian with training in Medical Nutrition Therapy, supporting clients with a range of conditions including diabetes, heart disease, kidney disease, transplant nutrition, and general wellness. She has a particular passion for diabetes management and finds it deeply rewarding to help clients improve their quality of life through better blood sugar control and sustainable eating habits.
Kelsey’s approach is individualized and inclusive, not a “one-size-fits-all” approach. She believes nutrition care should honor each person’s unique goals, lifestyle, and cultural food traditions. Kelsey is half Cuban-American and proudly embraces her cultural roots. She grew up on delicious staples like Ropa Vieja, tostones, rice and beans, flan, and cantaloupe by the spoonful. For her, food is about more than just nutrients—it’s memories, culture, and joy.
Kelsey earned her B.S. in Nutrition and Dietetics from East Carolina University. After this, she decided to pursue her Master’s in Public Health Nutrition from the University of North Carolina at Chapel Hill - Go Heels!
