About Me
Maria-José Romo-Palafox is a registered dietitian and researcher with a passion for helping clients reconnect with their bodies and make informed, authentic decisions about food and movement. Her counseling approach empowers clients to move away from strict dietary rules or quick fixes, focusing instead on tuning into their body’s natural hunger and fullness cues and becoming aware of sensations like bloating and discomfort. By fostering self-compassion and promoting choices that support both physical and emotional well-being, Maria-José collaborates with clients to create personalized, sustainable health strategies that honor their unique backgrounds and goals.
Originally from Mexico City, Maria-José developed a strong interest in nutrition and well-being early on, which inspired her to pursue a career in research and counseling. With training in both Mexico (B.Sc. in Nutritional and Food Sciences, Universidad Iberoamericana) and the U.S. (Ph.D. in Nutritional Sciences, The University of Texas at Austin), she brings a unique cross-cultural understanding of health and diet. This dual perspective allows her to effectively navigate the complexities of nutrition for both U.S. and Hispanic clients, making her skilled at working with a diverse range of people.
Maria-José is an Assistant Professor at Saint Louis University, where her research focuses on the social, cultural, and environmental factors that influence dietary patterns, with a special emphasis on maternal-child health. She also provides pro-bono services at Casa de Salud, where she supports underserved populations, particularly Hispanic and immigrant communities, with a culturally sensitive approach.
Outside of work, she loves dancing, warm days, and is happiest when she's in the water. She always has music playing and embraces living a colorful, joyful life. Exploring local food markets, spending time outdoors, practicing mindfulness, and relaxing with her two fluffy Maltese cuddle buddies are also some of her favorite pastimes.
