Nicole Burkhalter

​Nicole’s passion for nutrition began with a deep appreciation for the powerful connection between food and well-being. Early on, she recognized how confusing nutrition guidance can be—and felt inspired to help others cut through the noise with balanced, sustainable support. That drive led her to a career in dietetics, where she now offers personalized, science-based guidance tailored to each individual's health goals.

With over five years of experience as a clinical dietitian, Nicole has delivered Medical Nutrition Therapy to adults navigating a wide range of conditions in hospitals across Wisconsin and Indiana. In her primary role as a critical care dietitian in the ICU, she collaborated closely with medical teams to care for patients with complex nutritional needs. Today, as the founder of EmpowRD LLC, Nicole provides virtual consultations for adult clients seeking support for diabetes, cardiovascular disease, weight management, general wellness, and more.

Nicole believes that nutrition should feel both achievable and empowering. She brings a compassionate, client-centered approach to every session—helping individuals create sustainable habits that align with their lifestyle and values.

She earned her Bachelor of Science in Community-Medical Dietetics, with a minor in Psychology, from Viterbo University in La Crosse, WI.

Outside of her work, Nicole enjoys antiquing, baking, and spending time outdoors with her husband—whether hiking, kayaking, or skiing. She's also a devoted animal lover and adores her fluffy Great Pyrenees, Hudson.
