How To Meal Prep Steak Bites

Step 1: Prepare The Steak

Start by selecting a high-quality top sirloin steak. We recommend about one to one-and-a-half pounds if you're prepping for several meals.

Use a sharp knife to cut the steak into uniform, bite-sized cubes. Around one inch works well. Uniform cuts ensure even cooking and better texture.

Next, lay the steak pieces on a clean paper towel and pat them dry thoroughly. Moisture is the enemy of a good sear, so don’t skip this step.

Then, season the cubes generously with kosher salt and freshly ground black pepper. If you like a little extra kick, a pinch of smoked paprika or chili flakes can add nice depth. Let the seasoned meat rest for about 10 minutes at room temperature while you heat your pan.

Step 2: Sear The Steak

Add two tablespoons of butter or ghee to the center of the skillet. Let it melt fully, then add freshly minced garlic. Use about 3–4 cloves, depending on your preference.

Stir the garlic in the butter for about 30 seconds until it’s fragrant and just starting to turn golden. Be careful not to burn it.

Return the steak bites to the center of the pan if you removed them. Stir well so each piece is coated in that rich, garlicky butter.

It is important to remember to use butter sparingly. It can be enjoyed from time to time, but is a source of saturated fat that we want to be mindful of. 

Step 4: Garnish And Serve
