About Me

"I provide patient-centered care, supporting patients' individual health and wellness goals and specializing in food allergies and intolerances, integrating the best available research with clinical expertise and patient values. I'm a FARE-trained pediatric food allergy dietitian and became a board-certified health and wellness coach after completing my training and practical hours at the Mayo Clinic in Rochester, MN. Both of these excellent programs help me learn to better listen to and support my patients in the way they want to be supported. Read below for a bit more about my background!"

Eva Weston RDN, LD, NBC-HWC, is a registered dietitian nutritionist, licensed dietitian, and national board-certified health and wellness coach. She began working in clinical dietetics in 2008 and has worked in several in-patient acute and sub-acute clinical settings, while simultaneously working in outpatient private practice.

Eva is an integrative healthcare practitioner and trained to become a national board-certified health and wellness coach at the Mayo Clinic in Rochester, Minnesota, because she believes in treating the whole patient not only managing the diagnosis. This credential supplements her previous education and training as a registered dietitian nutritionist allowing her to utilize both medical nutrition therapy and a patient-centered approach to support behavior change. She is certified in Adult Weight Management via the Commission for Dietetic Registration (CDR).

Working to support the patient within the family dynamic is an important part of integrative patient-specific food allergy management. Eva has a widespread family history of allergic disease, which led her to become a dietitian and to pursue the specialty area of practice in food allergies and intolerances. This direct experience with a myriad of food allergies and intolerances gives her a unique perspective as both a patient, caregiver, and healthcare practitioner.

Other than direct patient care Eva’s expertise allows her to provide community education via public speaking, school lectures, and she leads a community support group for food allergies and intolerances. Eva also supports the healthcare community to improve its understanding of food allergies and intolerances via peer-reviewed publications, public speaking, and independent contracts as a subject matter expert.

Eva has served in both appointed and elected positions for local branches of the Academy of Nutrition and Dietetics (AND) where she continues to be an active leader for her professional association. Currently, Eva serves as the Kids Eat Right International Spokesperson for the International Affiliate of AND (IAAND).
