About Me

Huiqing (Esther) Xu is a passionate Registered Dietitian Nutritionist with a deep-rooted connection to the healing power of food. Raised in a quaint village in China, Esther's interest in nutrition grew from her grandmother's vegetable garden.

She pursued her passion in the United States, earning a Bachelor's degree in Nutrition and Food Science from Drexel University and completing a rigorous dietetic internship at Oregon Health & Science University Hospital. Esther furthered her education with a master's degree in Human Nutrition.

With a solid foundation in evidence-based practices, Esther translates her knowledge into practical recommendations, empowering clients to make informed choices about their diet and lifestyle. She believes that good nutrition is not about deprivation or strict rules, but rather about nourishing the body and cultivating a balanced, satisfying relationship with food.

Esther takes a client-centered approach, tailoring her recommendations to meet individual needs, goals, and preferences. Her professional practice covers various nutrition concerns, including weight management, diabetes, renal disease, sports nutrition, and disordered eating. She creates a supportive environment, helping clients overcome barriers and develop lifelong healthy habits.

In her free time, Esther enjoys traveling, exploring restaurants, gardening, and hiking.
