About Me
Katy Soper, MS, RD/LD, is a passionate and energetic dietitian who believes that food should be both nourishing and joyful. She is committed to helping individuals and families develop a positive, sustainable relationship with food, grounded in the belief that “healthy doesn’t have to be hard or expensive.” For Katy, eating well is not about perfection—it's about progress, planning, and intentionality. She empowers clients to create simple, realistic nutrition habits that support their lifestyle and long-term health.
Katy earned her Bachelor of Science in Nutrition, Dietetics, and Food Management from the University of Central Oklahoma in 2013. She went on to complete her Master of Science in Food and Nutrition Science alongside her Dietetic Internship at UCO in 2014. In 2015, she received a Certificate of Training in Childhood and Adolescent Weight Management through the Academy of Nutrition and Dietetics. A dedicated professional and lifelong learner, Katy has been a member of the Academy of Nutrition and Dietetics since 2010 and is an active leader within the Oklahoma Academy of Nutrition and Dietetics (OkAND), currently serving as the State Media Representative where she continues to champion community education previously through House FM's weekly "Let's Eat!" radio series and now through her appearances on FOX 25 OKC's weekly "Tasty Tuesdays" segments, and occasionally by providing other consumer series filmed for both the OKC and Tulsa areas.
With a deep love for education, Katy thrives as an Educational Guide, sharing her knowledge through various platforms. She is a Clinical Adjunct at the University of Central Oklahoma, where she has taught both undergraduate and graduate courses and previously served as the Dietetic Internship Director. She has delivered engaging nutrition talks to the UCO Dance Department and was an advisor to the UCO Student Food and Nutrition Club, as well as an advocate for campus wellness through the Healthy Campus Initiative.
Katy has also been a collaborative teammate in clinical settings, including her work as Program Coordinator and Clinical Dietitian for OU’s pediatric multidisciplinary weight management clinic, Healthy Futures. Her collaborative spirit extended to her time on the Dairy MAX Health and Wellness Advisory Council (2020–2022).
Katy supports her clients with encouragement and consistency, offering structure and guidance while celebrating each step forward. Her care is rooted in compassion, evidence-based practice, and a deep understanding that change happens over time—with the right support.
An Oklahoma native, Katy enjoys spending time with her family, walking with friends, trying new recipes, taking cooking classes, reading, traveling, and embracing the outdoors. She brings this same curiosity, joy, and balance into her nutrition practice, helping others discover what healthy living looks like for them.
