About Me
Nicole specializes in diet for managing inflammatory bowel disease and in intuitive eating. Nicole has Crohn's disease and has had a life-long battle with diet culture that she has overcome through the use of intuitive eating herself.
In regards to Inflammatory Bowel Disease, Nicole volunteers with Nutritional Therapy for IBD and has worked with dietitians who have created the IBD-AID diet and the CDED diet. She has completed PhD coursework with a focus on Crohn's and UC diet therapies. Nutrition approaches for IBD vary greatly person to person, depends on their disease states, previous surgeries, and personal preferences. Nicole can help you determine the best approach for you or your child in the least restrictive way possible.
In regards to Intuitive Eating, Nicole went into the field of nutrition initially because of her personal experiences with obesity growing up. Nicole intensively studied intuitive eating and has interviewed many therapists and dietitians on the topic. The approach to intuitive eating is not a one-size-fits-all all approach and requires consistent, non-judgemental trials and errors. You deserve to nourish your body, love and respect your amazing self, and get the greatest enjoyment out of food and life.
Outside of nutrition, Nicole loves to spend time with her family (husband, son and step-daughter), play with her dogs, and indulge in her fictional writing hobby hoping to someday soon publish her first novel.
